Cheesy Garlic Mashed Potatoes

Babafa doesn’t eat cream cheese.  I have never witnessed it, but he claims that it makes him throw up.  Apparently, he ate cheesecake when he was nine and threw it up all over the restaraunt and has resolved to never eat cheesecake or cream cheese again because it brings back terrible memories.  Poor baby.

What Babafa doesn’t know, is that I have stealthily added cream cheese to practically every meal he has ever eaten in the past 10 years we have been married.  Not because I’m a sly bitch.  Well, okay, maybe it’s because I’m a sly bitch.  Either way, I love food and, in my opinion, most food is better with cream cheese.  Amirite or AMIRITE?!!

Cheesy Garlic Mashed Potatoes

5 med potatoes

8 oz. cream cheese

1 c. sour cream

½ c. whipping cream

4 oz. butter (1 stick)

1 c. shredded cheddar cheese

1 clove garlic, minced

2 tsp. salt

¼ tsp. black pepper

½ c. shredded cheddar cheese (for topping)

 Wash and cut potatoes into 1” chunks.  Boil for 10 minutes or until tender all the way through.  Strain water and add all other ingredients (except topping).  Mix until well blended or to your favorite consistency.  Top with cheese before serving.

I recently served these with Eat My Meatloaf and Chili Coke Roast.
